 Among the thickening agent used in food industry,  sodium cmc  is the most widely used one.

In the USA, according to FDA the food grade CMC should be in accordance with the requirement of ASTM E466.

With a history of near 100 years as a food additivesodium carboxymethylcellulose is worldly accepted to be a thickener with no harm to human health. There are also many other thickeners in food and ranged by the thickening performance and from best to least, they are Guar gum, Xanthan Gum, Locust bean gum (or LBG),pectin, sodium alginate, carrageen, CMC, agar-agar, gelatine, Arabic Gum.
